Abstract

Rural industry development is often inhibited by the lack of energy supply infrastructure which makes it difficult to provide adequate electrical power and to supply thermal energy for process heat applications. In these circumstances there is a real potential to harness renewable energy sources to provide both power and process heat for a wide range of post harvest food processing industries in remote and rural locations. In this context the use of biopower, wind power or solar power should be considered for industrial applications such as milk processing, product drying and curing, or fermentation processess. In this paper the focus will be on the use of direct and indirect solar energy applications.
